Instructions
Peanut Dressing:
Warm Peanut Butter in the microwave for 15 seconds to make it easier to mix. Add all ingredients except for water. Mix well, then add 1 tablespoon of warm water at a time, and mix till desired consistency is reached. You can also add all the sauce ingredients to a blender or mini food processor and blend.
Assembly:
Place one or two leaves of washed lettuce, add shredded chicken, purple cabbage, carrots, cucumbers, green onion, and cilantro leaves. Squeeze a lime wedge on top, then drizzle peanut sauce, and top with chopped peanuts.
Notes
Natural peanut butter will require more mixing, especially if it's refrigerated. The sauce is going to look like it's not coming together, but keep mixing and add warm water if needed.Store leftovers and sauce separately up to 3 days.Rice Paper Rolls
